RECIPE: As summer winds down, make sure you throw these chicken skewers on the grill

As grilling season continues, I keep trying to make it interesting. I love food on a stick.

This recipe for shawarma chicken skewers is full of flavour and is easy to prep in advance. It’s also really convenient, as once you've prepped the skewers and they're ready to grill, they cook very quickly.

Whenever grilling, I try to make sure that the rest of my meal is ready before grilling any protein. This chicken is best served fresh off the grill and hot! I like to serve these with tahini or hummus on the side. Happy grilling!

INGREDIENTS

• 4 chicken breasts, cut into one-inch strips

• 6 boneless chicken thighs, cut into one-inch strips

• 2 tablespoons extra-virgin olive oil

• 1 teaspoon cumin

• 1 teaspoon curry

• 1 teaspoon turmeric

• 1 teaspoon paprika

• Pinch of cayenne

• 5 cloves garlic, chopped

• Salt to taste

• Skewers

INSTRUCTIONS

1. Mix all ingredients in a bowl and marinate for one hour or longer.

2. Skewer chicken

3. Heat the barbecue grill to a high temperature.

4. Cook for two to three minutes on each side or until slightly crispy on the outside and the chicken is no longer pink on the inside.
